i'm looking at store that has 32 tops, 14 dry, (4) 25# fronts. Owner has commercial Rhuud 100 gal. water heater. Is this sufficient?

In Arizona maybe. Here in the northeast, No.

What's the typical incoming water temperature in Arizona?

I have 20 tops 8 #18 lbs and 4 #25 1#30 and I have the same type water heater with a 400gal storage tank I think the 100 gal heater is all I need but it all depends on your business if the mat stays full all day long then i would say you might need to add a storage tank.

I assume you are looking to remake the store? the drawing for the remodel will have water usage numbers. I use tankless in my stores.

If the heater has about 600,000 BTU, it should be ok
