What type regular maitenance do you do to your A/C units?

Change Filters.

Change filters weekly. They need it! Vacuum out the inside of the A-coil at the beginning, middle and end of the cooling season. Inspect the condensor coils for dirt build up. But have never had to clean them.

Can you hose down the coil and condenser to clean them?

Yes, the coils can be hosed down. Just be VERY careful to not use too much pressure. Also, a brush will help dislodge any caked in dirt, again, being VERY careful to not bend fins and such. I suggest you do such a cleaning with the electrical power to the unit shutoff.
